When you sign up for BasqueStage, you don’t just sign up for a daily lesson in cooking from one of the world’s top chefs. And there’s definitely more to it than soaking up the Basque culture and food (even if Athena’s weekly pintxo updates make it seem otherwise).
One of the important parts of the BasqueStage is filming cooking and instructional videos, like these. To prepare for the videos, the stages spend time preparing and testing recipes, scheming up clever platings, and taking field trips to Sammic, the kitchen equipment company and sponsor of the program.
The factory is located about thirty minutes away, in the small town of Azkoitia. The stages take a monthly trip to get the lowdown on the latest machines coming out of Sammic. Many of the machines are used in the kitchen at Restaurant Martín Berasategui, but the newest ones are still in Azkoitia, being tested and perfected. Sometimes Tracy and Athena get to tour the factory and see them in action.
